Valentine’s Day Breakfast Recipe: Alisal Style French Toast

Recipe Ingredients & Instructions:
Chantilly Cream
-1 cup Heavy Cream, chilled
-2 tbsp. Confectioners Sugar
-1 tsp. Vanilla Extract
1. Add all Chantilly cream ingredients to a bowl and beat until soft peaks are formed.
2. Add to a piping bag fitted with a star tip.
Bourbon Maple Syrup
-¾ cup Dark Maple Syrup
-2 tbsp. Bourbon Whisky
-¼ tsp. Vanilla Bean Paste
1.Heat the bourbon in a small saucepan for 5 minutes on low heat. Stirring often. (This will cook off some of the strong alcohol flavor)
2.Whisk the bourbon, maple syrup and vanilla until evenly combined.
Strawberry Compote
-1 cup Sliced Strawberries
-¼ cup Brown Sugar
1.Heat a sauté pan over medium-high heat and add just barely enough oil to coat the pan.
2.Add the strawberries and sauté until they start to soften.
3.Add the brown sugar and cook until the sugar melts and strawberries are evenly coated.
Brioche French Toast
-4 each 1-inch-thick slices of Brioche Bread (If you can find a good local bakery, the finished product is much better)
-6 large Eggs
-1 cup Whole Milk
-1 tsp. Vanilla Bean Paste
-¾ tsp. Ground Cinnamon
-Salt to Taste
-3 tbsp. Unsalted Butter
-¼ cup strawberry compote (recipe above)
-¼ cup Chantilly Cream (recipe above)
-2 tbsp. Bourbon Maple Syrup (recipe above)
1.Whisk together the eggs, milk, vanilla, and cinnamon.
2.Dip the Brioche slices in the batter, and soak for 30 seconds on each side. (This creates a nice custardy center).
3.Melt the butter on a griddle and cook the brioche on each side until golden brown and just barely cooked through.
4.Serve with strawberry compote, Chantilly cream, and bourbon maple syrup.
